Warming spice covers clove, nutmeg, allspice and cardamom-adjacent notes. Where they are not added, they are among the clearest fermentation signatures available: eugenol and related phenolics are produced during extended fermentation and read exactly as clove.
The practical value is diagnostic. A bar with genuine warm spice character and a two-ingredient list is telling you the fermentation ran long and ran well.
