What temperature does chocolate melt at?
There is no single answer, and the reason why is the most interesting fact about chocolate: cocoa butter can solidify six different ways, each with its own melting point.
If you read nothing else
Tempered chocolate melts between about 30°C and 34°C — a range rather than a point, because cocoa butter can crystallise six ways and each melts differently.
The short answer
Well-tempered chocolate begins to soften around 30°C and is fully liquid by about 34°C. Milk and white chocolate melt a degree or two lower, because milk fat is softer than cocoa butter.
Human body temperature is around 37°C, which is why chocolate melts in the mouth and why that melt feels so clean — it happens over a narrow range, and it completes.
Why it is a range and not a point
Cocoa butter is polymorphic: its fat can pack into six different crystal lattices, and each has a different melting point. Form I melts around 17°C, Form V around 34°C, Form VI around 36°C.
So the melting point of a piece of chocolate depends on which crystal forms are in it — which depends on how it was cooled. That is what tempering manages, and it is why an untempered bar feels soft at room temperature while a tempered one snaps.
A bloomed bar has partly converted to Form VI, which is why it feels waxier and melts less readily than it did when new.
The numbers that matter in a kitchen
Three ceilings and three windows. Melting: do not exceed 50°C for dark, 45°C for milk and white, or the sugars caramelise and the damage is permanent.
Working, once tempered: 31–32°C for dark, 30–31°C for milk, 29–30°C for white.
Setting: the room needs to be below about 20°C, and below 18°C for milk and white. A correctly tempered batch in a warm kitchen will not set, and that is the constraint people check last.
