What is cocoa?

The same plant as cacao, under a word that has come to mean the processed and defatted form — and, in marketing, the unglamorous one.

Cocoa and cacao are the same plant. Modern usage puts cacao before processing and cocoa after, but the words carry no nutritional difference of their own.

One plant, two words

Cocoa and cacao both refer to *Theobroma cacao*. Historically the words were interchangeable and cocoa was simply the anglicised spelling, probably a corruption that stuck.

Modern usage has drifted so that cacao tends to describe the tree, the pod and the unprocessed bean, while cocoa describes what happens after processing — cocoa powder, cocoa butter, cocoa mass. That drift is a convention rather than a rule, and no regulator enforces it.

What cocoa powder actually is

Cocoa powder is what remains when cocoa mass is pressed and most of its cocoa butter removed, then milled. Typical fat content runs 10–24% depending on how hard it was pressed.

That defatting is why cocoa powder delivers more chocolate flavour per gram than melted chocolate: the flavour-carrying solids have been concentrated. It is also why a drink made from powder alone tastes thin — body in chocolate comes from fat.

The marketing use of the distinction

The one thing worth knowing is that the cacao-versus-cocoa split has been widely used to imply a nutritional difference that the words do not carry. A product labelled cacao powder and one labelled cocoa powder may be identical.

Where a real difference exists it is about processing — raw versus roasted, alkalised versus natural — and those are separate claims that can be checked on the ingredients list.
