What is natural cocoa?
Untreated cocoa powder — acidic, fruitier, reddish, and the only kind that will activate baking soda.

Natural cocoa is untreated, acidic, fruitier and redder. It is the only cocoa that activates baking soda, and it retains more flavanols than alkalised cocoa does.
Untreated is the whole definition
Natural cocoa is simply cocoa powder that has not been alkalised. It sits at pH 5.3–5.8, which is genuinely acidic, and it retains more of the fruity sharpness that alkalisation smooths away.
It is also lighter and redder in colour than Dutch-process, which is why a devil's food cake made with natural cocoa and baking soda develops its characteristic reddish tone.
Why recipes specify it
Only natural cocoa reacts with baking soda. If a recipe pairs cocoa with soda and no other acid, it was written for natural cocoa and substituting Dutch-process will flatten it.
The reverse direction is more forgiving: natural cocoa in a recipe written for Dutch-process generally works, giving a sharper flavour and a lighter colour.
The flavanol point
Natural cocoa retains more flavanols than alkalised cocoa, because alkalisation degrades a substantial share of them.
That is a compositional fact and not a health claim. What flavanol content means for a person eating chocolate is a separate and far less settled question, and the catalogue treats it separately for that reason.
