Which sugar is in your chocolate

Sugar in chocolate does structural work as well as sweetening, and the particle size matters more than the source does.

Refined cane and beet sugar are the same molecule. Where sugar genuinely changes a chocolate is through unrefined varieties carrying molasses and moisture, and through how finely it was refined.

What sugar is doing

Sweetening, and also occupying space. Sugar is typically the largest or second-largest component by weight of a milk chocolate and a substantial fraction of most dark, and it is a hard crystalline solid suspended in fat. That means it contributes to body, to snap and to how the chocolate melts.

Remove it and something has to take its place, which is why sugar-free formulations use bulking sweeteners rather than intense ones alone.

Cane, beet and the rest

Refined cane sugar and refined beet sugar are both sucrose — the same molecule, and once refined they are compositionally near-identical. Claims that one produces a better chocolate rest on trace differences that are difficult to detect in a finished bar.

Unrefined and partially refined sugars are a different matter, because they carry molasses. Panela, muscovado and similar sugars bring their own flavour and their own moisture, and moisture is the problem: a sugar carrying free water can affect the flow of the chocolate and the shelf life. Makers using them do so for the flavour and manage the consequence.

Coconut sugar and date sugar behave similarly — real flavour contributions with real handling costs.

Particle size is the variable that matters

How finely the sugar is refined determines whether the tongue detects it. Above roughly the threshold at which particles become individually perceptible, chocolate reads as gritty; below it, as smooth.

That is why Mexican stone-ground drinking chocolate is granular and a European bar is not, and it is a processing decision rather than an ingredient one. Two bars with identical sugar can feel completely different depending on how far they were refined.
