Does eating chocolate at night affect sleep?
Chocolate contains stimulants in quantities that are small but not zero, and the amount rises with cocoa content.
Plausible mechanism, limited human evidence
There is a credible biological or chemical reason it might be true, and that is different from evidence that it is.
What the evidence shows
Cacao contains theobromine and caffeine, both methylxanthines with stimulant activity. Content scales with cocoa solids, so a high-percentage dark chocolate carries meaningfully more than a milk chocolate and white chocolate carries essentially none. Caffeine's effect on sleep onset and architecture is well characterised as a general matter.
What it does not show
It does not establish that a typical portion of chocolate disrupts sleep in a typical adult. The caffeine in a dark chocolate bar is a fraction of that in a cup of coffee, and theobromine's stimulant effect is milder and longer-acting than caffeine's rather than equivalent to it. Individual sensitivity varies widely and no threshold applicable to a general reader has been established here.

The compositional facts are well established; the sleep-specific literature on chocolate specifically is thin, and most of what is cited is general caffeine research applied by extrapolation. Sensitivity to methylxanthines varies substantially between individuals for genetic and habituation reasons, which limits what any general statement can say.
