A ball mill reduces particle size by agitating the chocolate mass with steel balls in a jacketed chamber. It reaches target particle size in hours rather than days.
The important difference from a melangeur is separation of concerns. A ball mill refines without meaningfully conching, so the two steps can be controlled independently — refine to a specified micron figure, then conche for exactly as long as the flavour requires. That independence is why industrial chocolate can hit a specification precisely, and it is a real technical advantage rather than only a speed one.
What it does
Reduces particle size rapidly by mechanical impact, without the extended agitation that also conches.
Why it matters
Separating refining from conching lets a manufacturer control particle size and flavour development independently, which a melangeur cannot.

When it goes wrong
Over-refining, which produces an unpleasantly sticky mouthfeel — particles far below the perception threshold increase surface area and viscosity without improving texture.
