A roll refiner passes the chocolate mass through a stack of counter-rotating steel rollers, each pair set closer than the last. Particle size is set by the gap, which makes the result highly controllable and repeatable.

Five-roll refiners are standard in large-scale production. The precision matters because particle size distribution — not just the maximum — affects both mouthfeel and viscosity, and a roll refiner gives a narrower distribution than either a melangeur or a ball mill.

What it does

Reduces particle size by compressing the mass between rollers at progressively smaller gaps, producing a narrow and controllable size distribution.

Why it matters

Particle size distribution affects mouthfeel and viscosity independently, and roll refining is the most precise way to control it.

When it goes wrong

Refining too fine, which raises viscosity sharply and produces a claggy mouthfeel rather than a smoother one.
