Melangeur grinding

Granite wheels on a granite bed, running for a day or more. Grinds, refines and conches at once, which is why small makers use one machine.

A melangeur is a stone mill: granite wheels rotating on a granite bed, crushing nib until friction releases the cocoa butter and continuing until the particles are fine enough to be imperceptible.

Its significance is that it does three jobs at once. Grinding, refining and a substantial part of conching all happen in the same vessel over the same 24 to 72 hours, which is why a small maker can produce finished chocolate with one machine rather than three. The trade-off is that the three cannot be controlled independently — you cannot refine longer without also conching longer.

What it does

Grinds nib to a fluid mass and continues reducing particle size while agitating, combining grinding, refining and conching in one vessel.

Why it matters

It is what makes small-scale bean-to-bar production economically possible, and it is why craft chocolate's process descriptions often collapse three steps into one.

Run time controls particle size and conching extent together. Separating them requires separate machines.

Variants

  • Wet grinder melangeur. An adapted domestic Indian wet grinder, the entry point for very small makers. Slower and less consistent than a purpose-built machine.

When it goes wrong

Stopping too early, leaving particle size above the perception threshold — the most common flaw in small-batch chocolate.
