Pod breaking

Opening the pods and scooping out the beans with their surrounding pulp. The pulp is not waste — it is the fermentation's fuel.

Pods are split open, usually within a few days of harvest, and the beans removed together with the white mucilaginous pulp that coats them. Around thirty to fifty beans come out of a typical pod.

The pulp is the point. It is sugary, acidic and sterile inside the intact pod, and once exposed it is colonised immediately by yeasts and bacteria from the air, the tools, the workers' hands and the previous batch. Everything the fermentation does depends on that pulp being present and intact, which is why beans are never washed at this stage.

What it does

Releases the beans and their pulp from the pod and exposes them to the microbial environment that will ferment them.

Why it matters

The pulp carries the sugars the fermentation consumes. Removing or washing it — which looks like cleaning — destroys the fermentation before it starts.

Why the range is wide
The gap between harvest and breaking is sometimes deliberately extended by a few days — 'pod storage' — which raises the pulp's sugar concentration and is used by some producers to modify the fermentation.

When it goes wrong

Damaging the beans with the blade when splitting the pod. A cut bean ferments differently and can introduce mould into the batch.
