Tobacco is one of the more prized notes in the earthy family, and one of the clearest indicators of a long fermentation done well. It reads as dried leaf, cigar box or pipe tobacco — aromatic and slightly sweet rather than acrid.

It sits close to the boundary where the earthy family stops being pleasant. Tobacco is good; musty is a mould fault. The distinguishing feature is aromatic complexity: tobacco has it, mustiness does not.
