A Pacific producer whose beans are frequently smoky — and where that smoke is a drying artefact that some makers now prize and others work to eliminate.

Papua New Guinea grows cacao across New Britain, Bougainville and the mainland provinces, largely by smallholders. Its most recognisable characteristic in the trade is a smoky note, which comes from wood-fired dryers used because the climate makes reliable sun drying difficult.

That smoke divides opinion in a way worth recording. It is unambiguously a processing artefact rather than a terroir characteristic, and much of the sector's improvement work aims to remove it through better dryer design. At the same time, some makers seek PNG beans specifically for it, and market the result as a smoked chocolate. Both positions are coherent; what is not defensible is describing the smoke as an origin flavour.

Growing conditions

Grown in New Britain, Bougainville and mainland provinces in high-rainfall conditions that make sun drying unreliable through much of the harvest.

History

Cacao was introduced under German and then Australian administration, with plantation development in New Britain and Bougainville through the twentieth century. Smallholders now grow the majority of the crop.

The sector has faced two sustained shocks: the Bougainville conflict, which removed a major producing area from the market for years, and the arrival of cocoa pod borer in the 2000s.

Flavour character

Frequently smoky, over a base often described as fruity with tobacco and molasses notes. Non-smoky lots from improved drying can show considerable fruit.

Fermentation practice

Post-harvest handling matters at least as much as genetics, and is frequently the real explanation for what is described as an origin character. See fermentation.

Fermentation is generally well managed; drying is the weak point, with wood-fired dryers widely used and solar alternatives being introduced.

A drying reputation, not a bean reputation

Papua New Guinea's historic quality problem was smoke taint from wood-fired dryers, and it defined the origin's standing for decades.

The improvement work has been almost entirely about drying equipment. Where lots are properly dried, the Trinitario material produces aromatic chocolate with fruit and a distinctive savoury depth that experienced tasters value.

Growing regions

A claim about a country generalises across thousands of farms and dozens of fermentation protocols. A claim about one of these can be right. Where a region has evidence and depth of its own it has a page; where it does not, it is described here rather than given a thin one.

Bougainville

An autonomous region of Papua New Guinea where cacao is one of the principal cash crops, grown by smallholders. The sector was severely disrupted by conflict in the 1990s and has been rebuilt since.

New Britain

The largest island of Papua New Guinea's Bismarck Archipelago and a principal cacao area. It is one of the places where wood-fired drying and the smoky character it produces are most characteristic — and where improved dryer design has made the most difference.

Volcanic soils with very high rainfall through the harvest, which makes reliable sun drying difficult and artificial drying necessary.
