What is Dutch-process cocoa?
Cocoa treated with an alkali to raise its pH. It changes colour, flavour and — the part that matters in a recipe — how it behaves with baking soda.
If you read nothing else
Alkalisation deepens colour, smooths flavour and removes the acidity baking soda needs. Swapping cocoas means swapping the leavening too.
What the treatment does
Alkalisation raises cocoa's pH from around 5.3–5.8 to roughly 6.8–8.1, using potassium carbonate. The colour deepens from reddish-brown toward deep brown, the flavour smooths and loses its fruity sharpness, and dispersibility in liquid improves markedly.
The technique is named for Coenraad van Houten, who developed it in the Netherlands in the 1820s alongside the cocoa press.
The baking consequence
This is why most people arrive at the question. Baking soda needs an acid to react and produce lift. Natural cocoa supplies that acid; Dutch-process does not.
A recipe written for natural cocoa and baking soda, made with Dutch-process, produces a flat dense cake. Recipes written for Dutch-process use baking powder, which carries its own acid.
How to tell what you have
Look for alkalised, processed with alkali or Dutch-process on the ingredients. If nothing is stated, US-market cocoa is more often natural and European-market cocoa more often alkalised.
The fallback test takes seconds: a spoonful in water with a pinch of baking soda. Natural cocoa fizzes; Dutch-process does not.
