Alkalisation
Treating cocoa with an alkali to raise its pH. Darker, smoother, more soluble — and substantially lower in flavanols.
Alkalisation treats nibs, liquor or press cake with an alkaline solution, typically potassium carbonate, raising the pH from around 5.5 towards neutral or above. It is applied mainly on the cocoa powder branch of the chain.
The effects are a package deal. Colour darkens, from reddish brown through to near black at high treatment levels. Flavour smooths: the sharp, fruity acidity goes and a rounder, more uniform cocoa character replaces it. Dispersibility improves, which is why drinking cocoa is almost always alkalised. And the powder loses its acidity, which means it no longer reacts with bicarbonate of soda — the single most consequential fact about it for anyone baking.
What it also does is reduce flavanol content substantially. That is worth stating alongside the health discussion: the processing that makes cocoa pleasant to drink removes much of what the flavanol research concerns.

Raises the pH of cocoa with an alkaline treatment, darkening colour, smoothing flavour, improving dispersibility and neutralising the acidity that reacts with bicarbonate of soda.
Why it matters
It determines which leavening a recipe needs, how dark the result looks, and how much of the cocoa's flavanol content survives.

- Entirely optional, and applied mainly to cocoa powder rather than to eating chocolate. Natural cocoa is the untreated product.
What it does to the flavour
Reduces perceived acidity and fruit character, producing a rounder and more uniform cocoa flavour.
Variants
- Nib alkalisation. Treating the nibs before grinding. Gives more even penetration and is generally regarded as producing better flavour.
- Cake or powder alkalisation. Treating after pressing. Cheaper and more common, with less even results.
When it goes wrong
Over-alkalisation, which produces a flat, slightly soapy flavour along with the very dark colour. Colour is frequently the commercial objective, and flavour is what pays for it.
Commonly misunderstood
That very dark cocoa powder is more concentrated. The colour comes from the alkali. A black cocoa has been heavily treated, and it is generally less rather than more flavourful.
