Cracking

Breaking the bean into pieces large enough to separate from the shell. Crack too fine and the winnower cannot tell nib from shell.

Before shell can be removed it must be separated from the nib, which means breaking the bean without pulverising it. Cracking passes the beans between toothed rollers or through an impact mill sized to produce coarse fragments.

The constraint is that winnowing works by density and airflow, and airflow cannot distinguish a fine nib particle from a fine shell particle — both are light. So the cracker must produce nib pieces heavy enough to fall while shell fragments blow away, which means avoiding fines. A cracker set too aggressively costs yield twice: nib blown away with the shell, and shell left behind in the nib.

It is a genuinely fiddly step at small scale, and it is one of the practical reasons very small bean-to-bar production is hard.

Breaks roasted beans into coarse fragments sized so that nib and shell can be separated by airflow.

Why it matters

The particle size distribution it produces determines how well winnowing can work. Fines cannot be sorted by density, so they are lost or left behind.

When it goes wrong

Cracking too fine, which produces nib fines that blow away with the shell and shell fines that stay in the nib. Both reduce yield and quality at once.
