Pod selection and ripeness
Judging which pods to cut. The first quality decision in the chain and the least discussed.
Cacao pods ripen unevenly across a tree and are judged individually — by colour change, and by the hollow sound a ripe pod makes when tapped. There is no mechanical shortcut, because the tree presents ripe and unripe pods side by side.
The consequence runs all the way down the chain. Unripe pods carry too little pulp sugar to drive a fermentation; overripe ones may have germinated inside, which produces off flavours nothing downstream removes. A batch of mixed ripeness ferments unevenly, and unevenness at this stage cannot be corrected later.
What it does
Selects pods at the ripeness where pulp sugar content is highest and germination has not begun.
Why it matters
Pulp sugar is what the fermentation runs on. Selection sets the ceiling for everything downstream, and it is done by eye and ear.
When it goes wrong
Mixed ripeness in one fermentation batch, giving a mix of under- and properly fermented beans in a single lot. Also germinated beans from pods left too long, which produce off flavours.
Commonly misunderstood
That ripeness can be judged by size. It is judged by colour change and by sound, and it differs by variety — some pods are yellow when ripe and some are red.
