Sambirano Valley
A cacao growing region in Madagascar.
A single river valley in north-western Madagascar that produces effectively all of the country's cacao. Roughly ten thousand households farm it on holdings of half a hectare to a hectare and a half, with very little fertiliser or agrochemical use.

Terroir
The Sambirano river's alluvial floor near Ambanja in the Diana region, enclosed by mountains, with deep river-deposited soils and a wet season fed by reliable rainfall — a microclimate distinctly wetter than the surrounding country, which is why cacao grows here and effectively nowhere else in Madagascar.
Flavour character
Consistently described in the trade as sharply acidic with red-fruit and citrus character, to the point where 'Madagascan' functions as a flavour descriptor in the specialty market. These are commercial sensory accounts of a genuinely distinctive material, and no panel study is available to this catalogue.
