Ambanja
A cacao growing region in Madagascar.
The town at the centre of the Sambirano valley in north-western Madagascar, and the effective hub of Malagasy cacao. Several established fermentaries operate here, handling a large share of the national crop.

Terroir
Alluvial soils along the Sambirano river with a pronounced dry season and a heavy wet season. The concentration of fermentation infrastructure in one place is why Madagascan cacao is so consistent.
Flavour character
Often associated with bright red-fruit acidity and citrus, low in bitterness relative to that acidity.
This holds better than most regional claims because the production area and the fermentation infrastructure are both narrow. It still describes the fermentation regime alongside the genetics.
